CrockPot Creamy Chicken Potatoes

2 cups peeled baby carrots
1 lb. red potatoes, quartered
1 small onion, chopped
1 clove garlic, crushed
3.5-4 lbs chicken
1 cup chicken broth
3 tbsp cornstarch
1/2 tsp dried thyme
salt & pepper
1-10oz package frozen peas
1/2 cup heavy whipping cream
In 6qt slow cooker, combine carrots, potatoes, onion & garlic. Put chicken on top of veggies. Mix chicken broth, cornstarch, thyme, 1 tsp salt & 1/4 tsp pepper. Pour over chicken and vegetables. Cook on low 8 hour or high 6 hours.
Add peas and cream, heat through.
